The Southwest, Mexico, and most of Central America was conquered/settled by Spanish speaking people, not English speaking people. Hate, bitterness, and a general dislike for the Republic can cause some to rewrite history to fit their own revolutionary agenda.

And again, how far back do you want to roll the borders? Want to roll technology back the same amount? I personally prefer buying a steak at the grocer over trying to drive a herd of bison over a cliff and drawing on cave walls.
